Convenience
When I was in Italy three years ago, the chef I was working with used this tomato paste. I was immediately intrigued. I use quite a bit of tomato paste in sauces, soups and pastas. The problem is that most tomato pastes come in a can. This means that the excess has to be stored in another container. Unfortunately, I never remember when I put it in the fridge, I usually end up with moldy paste in my fridge. Then I open a new can and the whole ugly cycle starts again. Enter tomato paste in a tube.
